Whole Wheat Carrot Applesauce Muffins

Originally from here, but I modified.

1 1/2 cups whole-wheat flour.
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
Just under 1/2 cup olive oil
1/2 cup sugar (could even try a little less next time)
2 eggs
1 tsp vanilla extract
1 cup unsweetened applesauce
3/4 cup carrot shreds (I did them in the food processor)

1. Preheat oven to 350. Line muffin pan with liners and spray them.
2. Beat oil, sugar, eggs, vanilla on medium speed. Add flour, baking soda, cinnamon, ginger, and salt slowly. Batter will be really thick.
3. Fold in the applesauce and carrots.
4. Scoop into muffin tins. Bake for 20-24 mins.
