Best Ever Zucchini Bread
This is hands down the best zucchini bread recipe I have ever made. We downed it. It was delicious.
3 cups all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tbsp cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 tsp vanilla extract
2 cups grated zucchini
1 cup chopped walnuts (left out but would be delicious)
Grease 2 8x4 inch loaf pans. Preheat oven to 325.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add flour, salt, baking soda, and cinnamon. Beat well. Stir in zucchini and nuts until combined. Pour batter into prepared pans.
Bake for 40-60 mins. Cool in pan for 20 mins.

Carrot Apple Oat Muffins
From here
2 cups flour (I did 1 white 1 wheat)
1 cup rolled oats
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ginger
3/4 cup brown sugar
1 cup grated apple
1 cup grated carrot
2 large eggs
1/2 tsp vanilla
1/2 cup milk
1/2 cup vegetable oil
Preheat oven to 350F and grease muffin tin.
Place flour, oats, baking powder, baking powder, baking soda, sugar and stir to combine.
Add in grated carrot and apple, stir until coated.
Place eggs, vanilla, milk and oil into kitchen aid and beat lightly.
Add in flour mixture.

1/4 tsp baking powder
1 cup mini chocolate chips (used regular)
Preheat oven to 350.
Mix bananas, egg, oil, and zucchini in kitchen aid.
Add sugar, flour, cocoa, baking soda, and baking powder.
Stir in chips.
Spoon into greased muffin tins. Sprinkle tops with sugar.
Bake 20 to 25 minutes at 350F.

Banana Muffins
These were really good. Left out the nuts, but would maybe add next time. From here.
2 cups flour (half white, half wheat)
1 1/2 tsp baking soda
1/2 tsp salt
4 overripe bananas
1 cup brown sugar (used slightly less)
3/4 cup unsalted butter melted (coconut oil instead)
2 eggs
1 tsp vanilla extract
1/2 cup chopped pecans
Preheat oven to 375 and lightly butter muffin tins. Mash 2 bananas with a fork in a small bowl so they still have texture (I skipped this, but want to try next time.) Wire whisk the remaining bananas and sugar for 3 minutes. Add butter, eggs, vanilla and beat well scraping down the sides. Mix in dry ingredients. Fold in the nuts and mashed bananas with a rubber spatula. Bake about 18-20 minutes.
Pumpkin Banana Muffins
I always forget to save these recipes when I like them...both of my kiddos eat these well.

Egg & Potato Hash
Found this on Pinterest...we modify the meat, potatoes, etc., but I like the spice combo.
1/2 lb ham steak, chopped (we use bacon, Italian sausage, etc.)
1 apple, chopped
1 sweet potato, chopped (we mix this up with sweet, red or both)
1/2 onion, diced
garlic (I usually add a little minced garlic)
4 eggs, scrambled
oil
spices
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp allspice
1/4 tsp cayenne pepper
Chop and microwave potatoes for 3-4 minutes. Cook bacon/ham/meat in skilled while those are microwaving. Remove bacon. Drain grease leaving enough to cook potatoes in. Add potatoes, onion, and spices. Cook until potatoes are almost done. Add apples and cook a few more minutes. Move all veggies to the side and scramble the egg in the other half of the pan. Mix together, and add meat back in. And serve.

Whole Wheat Blueberry Muffins
I think this is my favorite muffin base. Modified from here.
1 1/2 cups whole wheat flour
1/2 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup almond milk
1/2 cup unsweetened applesauce
1 pint fresh blueberries
Preheat oven to 400. Grease 12 muffin cups or line with liners.
Whisk vegetable oil, egg, milk, and applesauce together in a separate bowl until smooth.
Add dry ingredients to wet ones and mix until moistened. Lightly stir in the blueberries. Spoon into muffin cups.
Bake until tops are golden about 18-20 minutes.

Crunchy French Toast
This was amazing. I made it on a whim for my kids. It's probably one of the top 5 things I've ever cooked. From here. We had two day old homemade bread, and it was delicious with a thicker cut piece of bread. I also didn't measure anything.
3 whole eggs
1/4 cup half-and-half (I used almond milk)
1 tsp vanilla extract
1/2 tsp cinnamon
1/3 cup sugar
4 slices whole wheat bread (or any bread)
1 cup panko bread crumbs
1 stick salted butter melted (I used olive oil)
Whisk eggs, milk, half os sugar, half of cinnamon, set aside.
Stir panko with rest of sugar and cinnamon. Use a fork to stir in 2 tbsp of butter so the crumbs are slightly moist.
Head skillet with the rest of melted butter.
Dunk bread in the egg mixture. Lay them in the dish with the panic crumbs, turn them over and repeat.
Put in the skillet with the butter and let them cook on the first side for 5 to 6 mins (definitely didn't cook this long). Turn and cook for 3 minutes on the other side.

1/2 cup butter (I used Earth Balance)
2/3 cup sugar
1 cup mashed banana (about 2 medium)
1 large egg
1 tsp vanilla
1/8 to 1/4 tsp butter rum or coconut flavor (didn't have but would be good)
1/3 cup milk
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup chocolate chip
1 cup chopped walnuts (pre-toasted in a 350 oven for 8 mins) (didn't have)
1 cup cinnamon chips (didn't have but added a tsp of cinnamon instead)
Preheat the oven 350. Lightly grease 12 to 14 muffin cups.
Beat together the butter and sugar until smooth.
Beat in the mashed banana, then egg, flavorings, and milk.
Add baking powder, baking soda, salt, and flours. Stir until Smooth. Beat at higher speed until lumps disappear.
Stir in chocolate chips, walnuts, and cinnamon chips.
Heap batter into muffin cups. Sprinkle with course white sugar if desired (didn't but want to next time).
Bake muffins for 20-23 minutes (I did mini muffins for 10 mins).

Maple, Bacon, Pancake Bites
Originally from here, but I modified a decent amount.
Pancake Batter:

1 tbsp white vinegar
2 tsp vanilla extract
2 eggs
1/2 stick butter, melted
Preheat oven to 425. Combine milk and vinegar and let sit 1 minute. Whisk in vanilla, eggs, and butter until combined. Add flour, sugar, salt, and baking powder. Mix until combined. Fill mini muffin tins 2/3 cups full. Bake 9-12 minutes until lightly golden brown. Let cool and then frost and top with crumbled bacon. I think it would be good to drizzle maple syrup on top of too, but I forgot.
Frosting:

2-3 cups powdered sugar
2 tbsp milk
2 tbsp maple syrup

Sift the dry ingredients together in a large bowl. Separate the eggs. In a small bowl, beat the egg whites until stiff. Mix together the egg yolks, milk and oil and stir slightly. Add to dry ingredients and mix well. Fold in beaten egg whites.
Cook them. :)

Rice Pudding
Easy Rice Pudding
2 cups cooked brown rice (or white)
2 cups milk
3 tbsp butter
1/3 cup sugar
1/2 tsp vanilla extract
1/4 tsp nutmeg
1/4 tsp cinnamon
Mix all of the above in a heavy sauce pan. Bring to a gentle boil over medium low heat. Stir often to make sure it doesn't burn.
Cook for 15-20 minutes or until thickened. Let cool for 10 minutes. Serve hot or cold and enjoy.

1/2 cup creamy peanut butter
1 cup milk
1/2 cup milk
1/2 cup mashed bananas
1 egg
1 tbsp oil
1 tsp vanilla
Heat oven to 375. Whisk peanut butter and milk until blended; stir in bananas, egg, oil, and vanilla. Add to first 5 ingredients to mixture; stir until moistened.
Bake mini muffins 8-10 minutes.
Large muffins 18-20 minutes.

Oatmeal Chocolate Chip Cookie Pancakes
These were delicious and hearty. Modified from here.
1 very ripe medium banana
1 tsp baking powder
1 egg
pinch salt
1/2 tsp vanilla extract
1 tbsp almond butter (I used peanut butter)
1 tbsp olive oil
3 tbsp almond milk
1/2 c. rolled oats
1/4 c. whole wheat flour
3 tbsp semi sweet chocolate chips.
Mash banana. Add egg, oil, salt, vanilla, almond butter, milk and stir.
Stir in oats, flour until combined.
Add chocolate chips.
Poured in 1/4 c. measurements onto griddle.

1 cup almond milk + 1 tbsp lemon juice (or buttermilk)
1/2 c. brown sugar
2 tbsp olive oil
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
3/4 c. whole wheat flour
3/4 c. unbleached all purpose flour
1/3 c. chocolate chips
1. Preheat oven to 375 degrees and line muffin tin with paper liners.

1 c. fresh or frozen raspberries
Combine oats and milk + vinegar. Let stand 5 to 10 mins.
Beat egg in mixer. Add sugar and oil. Stir in oats mixture. Add flour, baking powder, soda, and cinnamon. Fold in fruit.
Bake at 350 for 18 minutes.

Banana Chocolate Chip Muffins
Originally from here - I've modified quite a bit.
3/4 c. white sugar
6 tbsp butter/oil - I use olive oil.
6 tbsp ground flax
1 tsp vanilla extract -- I left out because I added protein powder instead.
2 eggs
1 1/2 cups whole wheat flour
2 scoops vanilla protein powder (I use this since it's dairy free.)
1 tsp salt
1 tsp baking soda
3 ripe bananas
3/4 c. chocolate chips
1/2 c. chopped walnuts (optional)
Blend sugar, oil, flax, eggs, vanilla until smooth and creamy.
Add protein powder and bananas and blend until bananas are mashed.
Add flour, salt, baking soda. Mix until combined. Add chocolate chips.
Bake at 350. Mini muffins took about 15 mins. Regular sized muffin cups took about 20.

Blend sugar, oil, flax, eggs, vanilla until smooth and creamy.
Add protein powder and bananas and blend until bananas are mashed.
Add flour, salt, baking soda. Mix until combined. Add chocolate chips.
Bake at 350. Mini muffins took about 15 mins. Regular sized muffin cups took about 20.

Pumpkin Pancakes
1 3/4 c. milk
1 c. pumpkin puree
1 egg
2 tbsp vegetable oil
2 tbsp vinegar
2 c. whole wheat flour
3 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground all spice
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
Mix milk, pumpkin, egg, oil, and vinegar in mixer. Add flour, sugar, baking powder, baking soda, all spice, cinnamon, ginger and salt. Stir to combine.
Use 1/4 c. of mix for each pancake.
