Lemonade Cake (modified from here)
I made this last year, and I'm planning to repeat.
Cake:
1 Lemon boxed cake mix
4 eggs
1 1/4 c. almond milk
2 tbsp lemonade from concentrate
Glaze:
2 tbsp lemonade from concentrate
1 cup powdered sugar
1 tbsp water
Frosting:
1/2 cup shortening
4 to 5 cups powdered sugar
1/4 tsp salt
1/4 tsp vanilla
2 tbsp lemonade from concentrate
I usually top that with homemade marshmallow fondant…because I love fondant.
1. Preheat oven to 350.
2. Spray 2 round 8" cake pans with cooking spray
3. Beat all cake ingrienets in mixer on low for 30 seconds then medium for 2 mins
4. Bake according to package directions.
5. Let cakes cool for about an hour. Do not remove from pans.
6. Poke holes in cakes.
7. Make glaze.
8. Pour equally over the tops of the cakes.
9. Cover and let rest at least an hour, but overnight is best.
13. Remove from fridge & frost.

Whole Wheat Sugar Cookies
Whole Wheat Sugar Cookies (modified from here)
1 cup sugar (commenter suggested cutting this in half…might try next time)
1/2 cup shortening
2 tbsp almond milk
1 tsp vanilla
1 egg
1 3/4 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 375.
Cream shortening and sugar. Add milk, vanilla, and egg. Mix again.
Add flour baking powder, soda, and salt. Mix again.
I rolled out and cut into shapes with a cookie cutter.You can also drop into 1-inch balls.
Bake for 7-10 mins.

1/2 c. rolled oats
1 c. almond milk + 1 tbsp apple cider vinegar
3/4 c. whole wheat flour
3/4 c. all purpose flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 egg
2/3 c. brown sugar, packed
1/4 c. olive oil
1 c. fresh or frozen raspberries
Combine oats and milk + vinegar. Let stand 5 to 10 mins.
Beat egg in mixer. Add sugar and oil. Stir in oats mixture. Add flour, baking powder, soda, and cinnamon. Fold in fruit.
Bake at 350 for 18 minutes.
